Possessing an expert palate, our highly qualified Sommelier and Natural Wine Educator, Chris Ford, is passionate about Natural Wine. In fact, just like the Harbourside Bar & Kitchen ethos, Chris loves the fact that these wines are created with great respect for the environment.
Hailing from South Africa, Chris lives and breathes the captivating world of wine. His experience ranges from serving prestigious first growths in the middle of the African bush, to planting vines in Cyprus. Chris has enjoyed extensive opportunities to gain hands-on experience in the vineyard and he loves to share his love of wine with people from all over the world.
Chris now calls Tropical North Queensland home. It’s here he continues his vinous journey discovering the grapes and wine styles that perfectly suit the region’s tropical climate and dining culture. Chris is thrilled to be able to impart his knowledge about lo-fi wine to guests at Harbourside Bar & Kitchen. He’ll recount the enchanting stories behind each wine, and answer any questions about HB&K’s Natural Wine List.

With our proximity to the Coral Sea and the Great Barrier Reef, we take great care not to contribute to pollution of the marine environment and wildlife endangerment, making sure we don’t use plastic straws and using biodegradable coffee cups and lids.
One of the most challenging aspects of the catering industry is the distance food must travel before it ends up on the customer’s plate. HB&K is dedicated to offering slow food, using as much local produce as possible on its menus thereby reducing the emissions caused by food transportation, a choice which also supports local growers and suppliers.
HB&K is wholeheartedly committed to Natural Wine because the techniques employed in the vineyard and winery to make these wines not only ensure that the wines are vibrant and flavoursome, but also that they are better for the environment.
HB&K is located at Holiday Inn Cairns Harbourside, an IHG hotel that uses the IHG Green Engage system. This innovative online environmental sustainability system gives IHG hotels the means to measure and manage their impact on the environment. It enables them to utilize over 200 ‘Green Solutions’ that are designed to help them reduce their energy, water and waste. Together with Holiday Inn Cairns Harbourside, HB&K is implementing many environmental initiatives under the IHG Green Engage program.
